Bio/Research

Prof. Martinez' research focuses on the development of high quality ingredients/foods with targeted nutritional properties from a carbohydrate standpoint. Most foods containing sugars and starch are categorized as having high glycemic index, i.e. it rapidly increases the postprandial blood glucose. Mario is seeking for edible plant materials and technologies that result in foods with a sustained glucose release.

He hopes to find a permanent solution that decrease the risk of suffering from hyperglycemia-related diseases, such as obesity, type II diabetes and cardiovascular disease. As an example, he is investigating the role of the molecular structure of complex carbohydrates in human digestion and food texture.
