Bio/Research

Dr. Mine’s primary research focus is molecular approaches to the study of structure-function relationships of bioactive proteins/peptides and egg allergy to enhance human intestinal health. His research group is exploring novel approaches to cure chronic oxidative stress and inflammation using dietary peptides, amino acids and pro-/prebiotics as well as an understanding of the mechanisms of actions of food factors-gene interactions. His group has demonstrated a new proof of concept of long-term low-grade chronic inflammation and potential risk of metabolic disorders. This impacts microbiota and signalling molecules.

Mine received the PREA (The Premier’s Research Excellence Award) in 2000 and the American Egg Board Research Award in 2005. Since 2010, he has been an associate editor for the "Journal of Agricultural and Food Chemistry" (ACS publications) and has been serving as an editorial advisory board member for the international journals "Functional Foods", "Food Biosciences", the "International Journal of Food Science Technology" and "Nature-Science of Food". Mine is also actively involved in numerous international food and health-related symposiums as an invited speaker and advisor of food and health ingredient companies.

He has published five books, 38 book chapters, 15 review articles, and 186 original papers in peer-reviewed international journals.
